Dutch people say: Pannekoeken met spek en stroop. The picture on the right shows the smaller Dutch version: poffertjes, a kind of tiny pancake served with butter and sugar.
The Americans call them: Pancakes with bacon and maple syrup. Both young and old loves them through the ages.

Pancakes with bacon and maple syrup.
Serves 4, preparation time 20 minutes
Ingredients
125g plain flour
1.5tsp baking powder
Pinch of salt
1tsp caster sugar
1 large egg
175ml skim milk
2tsp sunflower oil
8 strips of bacon
25g butter
8tbsp maple syrup

Method

1 Sift the flour, baking powder and salt into a large bowl. Add the sugar. Make a hole, add the egg and milk and whisk just enough to make a thick batter - don’t worry if it’s a little lumpy.
2 Lightly grease the base of a large non-stick frying pan with the oil and wipe away any excess with paper towel. Heat the pan until really hot and spoon in 2 tablespoons of butter. Pour in a ladle full of batter. Leave until bubbles form on the surface, then flip over with a spatula and fry until the other side is brown. Make the pancakes in batches, a few at a time, keeping them warm as you go.
3 Meanwhile, grill the bacon. Serve it with the warm pancakes, topped with a dollop of butter and maple syrup.
